I made these Cauliflower Tortillas last night and I am hooked! They take a little work but if you are paleo, trying to avoid gluten or just a lot of carbs, these are worth the effort. Just 2 ingredients and some spice is all it takes to make these little gems.
I was really surprised at how well these stuck together. I made fajitas and these wraps held together well; even over stuffed. I will be making these again and again.
Instead of microwaving the riced cauliflower, I steamed mine for a few minutes. Just long enough to heat all the way through. I then used a cheese cloth to squeeze as much liquid as possible from it.
If you want to cut down your prep time use a Crepe Maker. Make the same way you would make the crepe and you can avoid baking these in the oven.
